Harvest Turkey and Veggie Wraps
Smoked turkey tossed with fresh corn, bell pepper, onion and alfalfa sprouts in ranch dressing and neatly wrapped up in a warm, soft flour tortilla.
2 cups coarsely chopped cooked turkey
1/2 cup fresh corn kernels
1/2 cup red bell pepper, chopped
1/4 cup red onions, thinly sliced
3 tablespoons ranch dressing
2 cups alfalfa sprouts
4 (10 to 12-inch) flour tortillas, warmed*
- Combine first five ingredients in a large bowl, tossing well to coat.
- Top each tortilla with 1 cup turkey mixture and 1/2 cup sprouts; roll up.
- To serve, cut each wrap in half diagonally.
Makes 4 servings.
*For fun color and flavor, use one of the flavored varieties of flour tortillas/sandwich wrap flatbreads readily available at most supermarkets.
