Hot and bubbly right out from under the
broiler, these quick to fix open face sandwiches are great for
lunch. For a more complete meal just add crunchy tortilla chips
and your favorite fruit salad.
Refried
Bean and Salsa Sandwiches
- 1 (30-ounce) can refried
beans
1/4 cup sliced green onions
6 thick slices ciabatta or other crusty-style bread, lightly
toasted
1 1/2 cups shredded pepper Jack cheese
1 1/2 cups roasted garlic and tomato salsa
- Preheat oven to broil.
- Spread refried beans on
toasted ciabatta bread. Sprinkle with onion and cheese.
- Broil until heated through
and cheese is melted. Spoon salsa over sandwiches or serve on
the side.
