Broiling enhances the rich flavor of salmon. This tasty sandwich can be the main dish in a casual dinner or fun lunch.
Salmon Sandwiches With Pesto Mayonnaise
- 1/4 cup mayonnaise
1/4 cup BUITONI® Pesto Sauce
1 (20-inch) baguette
2 tablespoons extra virgin olive oil, divided
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
4 (4-ounce) salmon fillets
4 romaine lettuce leaves
- Preheat broiler.
- Mix mayonnaise and pesto in a small bowl. Slice baguette to make 4 equal sections; split in half lengthwise.
- Brush salmon with half the oil and season with salt and pepper. Place on a baking sheet 4 to 5 inches from heat and broil for 4 minutes. Turn fish over and continue cooking, until fish flakes easily with a fork, about 4 more minutes depending on thickness. Remove from oven and set aside.
- Brush each bread half with remaining olive oil and place under broiler until golden brown. Spread pesto mayonnaise over each half; top half of the bread halves with a salmon fillet and lettuce leaf. Place other side on top to make a sandwich. Serve immediately.
