Sweet Potato Sandwich Wraps

Sweet Potato Sandwich WrapsSweet potato purée replaces mayonnaise or mustard and pairs well with sliced turkey, avocado.

Recipe Ingredients:

1 medium sweet potato
1/2 teaspoon garlic powder
2 tablespoons lemon juice
1/4 teaspoon salt
Freshly ground pepper
1/4 teaspoon thyme
1/4 teaspoon basil
4 (10-inch) flour tortillas
8 slices turkey breast
1 large ripe tomato

Cooking Directions:

  1. To Make Sweet Potato Purée: Boil sweet potato in water until softened. Remove skin and purée in food processor. Stir in garlic, lemon juice, and seasonings and set aside to cool.
  2. Lay tortillas out flat on work surface and spread purée to 1/2-inch of edges. Lay out 2 slices turkey on each.
  3. Slice tomato thinly. Remove pit from avocado and slice. Arrange tomato and avocado slices over turkey. Roll each tortilla up into a log. Cut in half and serve.

Makes 8 servings.
