This chicken salad can be used as the filling for the cream puffs. Leftover turkey from Thanksgiving dinner can be used as a substitute for the chicken.
Toasty Warm Chicken Salad
- 4 large hard-cooked eggs, chopped
- 1 (10-ounce) can of chunk chicken
- 1/4 cup Italian dressing
- 1 cup celery, chopped
- 1/2 cup mayonnaise
- 3 ounces cream cheese, softened
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/2 cup seasoned bread crumbs
- 1 tablespoon melted margarine or butter
- In a medium bowl, place chicken, Italian dressing, hard-cooked eggs, and celery.
- In separate bowl blend mayonnaise, cream cheese, lemon juice, and salt until smooth.
- Stir the two mixtures together and pour into a 9 x 9-inch glass baking dish.
- Combine margarine and bread crumbs and sprinkle evenly over the top. Microwave on full power for 7 to 9 minutes or until bubbly.
