Turkey Tacos

1 teaspoon canola oil
6 ounces ground turkey
1/2 cup chopped onion
1/2 cup salsa
1/2 cup canned white beans (rinsed and drained)
4 taco shells
4 ounces cheddar cheese, shredded
1 cup shredded iceberg lettuce
1/2 cup diced tomato
  1. In a medium non-stick skillet, heat oil. Add ground turkey and sauté for 5 to 6 minutes. Add onions; cover and cook until onions are softened.
  2. Add salsa and white beans. Cover and simmer for 10 minutes.
  3. Spoon turkey mixture into taco shells.
  4. Serve with toppings of cheese, lettuce and tomato.

Makes 4 servings.
