Turkey Tacos
- 1 teaspoon canola oil
6 ounces ground turkey
1/2 cup chopped onion
1/2 cup salsa
1/2 cup canned white beans (rinsed and drained)
4 taco shells
4 ounces cheddar cheese, shredded
1 cup shredded iceberg lettuce
1/2 cup diced tomato
- In a medium non-stick skillet, heat oil. Add ground turkey and sauté for 5 to 6 minutes. Add onions; cover and cook until onions are softened.
- Add salsa and white beans. Cover and simmer for 10 minutes.
- Spoon turkey mixture into taco shells.
- Serve with toppings of cheese, lettuce and tomato.
