
This black bean salsa makes a great compliment
to grilled fish, burgers, pork and barbecued chicken.
Black
Bean Salsa
- 1/2 onion, minced
1/4 cup fresh cilantro, chopped
1 medium jalapeno, minced
1 (15-ounce) can black beans, rinsed and drained
Salt to taste
1 tablespoon lime zest
1 tablespoon fresh lime juice
1/2 teaspoon orange zest
- In a medium bowl, combine
the onion, cilantro, jalapeno, black beans, salt, lime zest,
lime juice and orange zest.
- Supreme the orange used
for zest to remove the pith, and add to the onion mixture. Squeeze
the juice from the orange into the bowl as well.
- Mix to blend all the flavors.
Makes 4 servings.
