A Caribbean rub that brings the slightly sweet and spicy flavors of the Islands simply.

Caribbean Rub

1 teaspoon granulated sugar
1 teaspoon dried minced onion
1/4 teaspoon salt
1/2 to 3/4 teaspoon crushed red pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground black pepper
1 teaspoon dried thyme leaves, crushed
  1. In a jar with a tight sealing lid, shake together all the ingredients. Store in jar. Can be used on pork chops, small roast or tenderloin.

Makes about 1/2 cup.
