Fruit salsas are very versatile; serve as a condiment at your next barbecue as well as with the traditional chips.

Fresh Fruit Salsa

1/2 cup diced fresh or canned pineapple (preferably fresh)
3/4 cup diced mango
3/4 cup diced papaya
1/2 cup diced green apple
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
2 tablespoons rice vinegar
1 tablespoon minced fresh cilantro
4 teaspoons granulated sugar
1/4 teaspoon crushed red pepper
1 package tortilla chips
  1. Combine all ingredients. Cover; chill before serving. (May be prepared one day in advance.)
  2. Serve with tortilla chips

Makes about 3 cups.
