Berry Jam
- 4 cups fresh or frozen
strawberries, slightly mashed
2 1/2 tablespoons powdered fruit pectin
3 cups granulated sugar
- In 2-quart saucepan combine
strawberries and pectin. Cook over medium heat, stirring constantly,
until mixture comes to a full boil (10 to 15 minutes).
- Stir in sugar. Continue
cooking, stirring constantly, until mixture comes to another
full boil (3 to 5 minutes). Boil 1 minute.
- Remove from heat; with
large metal spoon skim foam from top. Pour jam into hot sterilized
jars. Store refrigerated.
Makes 5 to 6 pints.
