dishes. This tangy relish goes great spooned over grilled or
broiled chicken and turns plain steamed fish into a simple yet
elegant entrée.
Pineapple
Corn and Green Chile Relish
- 1 1/2 cups frozen corn,
thawed
1 (8-ounce) can crushed pineapple, drained
1 (4-ounce) can diced green chiles
1/4 cup diced red onion
1/4 cup diced red bell pepper
1 tablespoon chopped fresh cilantro
1/8 teaspoon cayenne pepper
- Combine corn, pineapple,
chiles, onion, bell pepper, cilantro and cayenne pepper in medium
bowl. Let stand for 20 minutes for flavors to blend.
Makes 3 cups.
