A Parmesan coating gives this seafood dish a rich sharp flavor. Turbot, or European Flatfish, is a mildly flavored firm white fish

Breaded Fish

3/4 cup butter, melted
2 tablespoons lemon juice
1 cup dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 1/2 pounds firm-fleshed white fish fillets, such as turbot, sole or cod

  1. Preheat oven to 350°F.
  2. Combine butter and lemon juice in a shallow bowl. In a medium bowl, mix together bread crumbs and Parmesan cheese. Dip fish into butter mixture; roll in bread crumbs.
  3. Bake 15 to 20 minutes or until it flakes easily with a fork. Serve sprinkled with parsley or extra Parmesan.

Makes 4 servings.
