Catfish fillets sautéed
in butter and served with a lemony almond butter sauce.

Almondine
2 tablespoons butter
1 1/2 pounds catfish
1/4 cup slivered almonds
1 lemon
- In a 12-inch skillet over
medium low heat melt 1 tablespoon butter. Saute catfish until
lightly golden and flakey. Transfer to an 8-inch square pan and
keep warm in a 200°F (95°C) oven.
- In the same skillet, melt
remaining butter. Add slivered almonds, grated lemon peel and
juice from lemon, stirring once. Remove catfish from oven. Pour
the sauce over the catfish.
