Fillet of flounder stuffed with a tasty vegetable, Swiss cheese and bread crumb mixture and baked.

Nordic Stuffed Fish Fillets

1 pound fillet of flounder
1 carrot, grated
2 green onions, chopped
1/4 cup chopped red bell pepper
1/2 cup chicken broth
2 tablespoons lemon juice
2 tablespoons grated lemon peel
1/2 teaspoon crushed oregano
1/2 cup dry bread crumbs
1/2 cup shredded Swiss cheese

  1. Preheat oven to 350°F (175°C). Lightly spray an 11x7x2-inch baking dish with vegetable cooking spray. Place half of flounder into the dishl set aside.
  2. Spray a small skillet with cooking spray and add carrot, green onions, and red bell pepper. Heat over medium heat for 3 minutes, stirring to prevent sticking. Remove from heat; reserve.
  3. In a bowl, combine chicken broth, lemon juice, grated lemon peel, and oregano. Add half of the carrot mixture with dry bread crumbs and shredded Swiss cheese. Mix well.
  4. Pour 1/2 of mixture over the fish. Cover with the remaining piece of flounder; top with the remaining carrot mixture. Cover and bake 8 to 10 minutes (about 10 minutes for each inch of thickness in the thickest part of the fish when it is lying flat) or until the fish flakes easily with a fork.

Makes 4 servings.
