Oven-Roasted Cilantro-Lime Alaska Halibut

1 tablespoon grated lime zest
1/2 cup chopped fresh cilantro
2 tablespoons minced garlic
1 1/2 teaspoons ground cumin
2 tablespoons olive oil
4 Alaska Halibut fillets (6 to 8 ounces each), fresh or thawed
Salt and ground black pepper to taste
- Preheat oven to 425°F (220°C).
- Combine lime zest, cilantro, garlic, cumin and olive oil in small bowl.
- Season Alaska Halibut fillets with salt and pepper and coat with cilantro-lime mixture. Transfer fillets to spray-coated baking sheet/dish.
- Roast fillets about 8 to 10 minutes, cooking just until fish is opaque throughout.
