Seasoned, floured and 'pan-grilled' catfish.

Pan-Grilled Catfish

1 cup water
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1 cup all-purpose flour
2 tablespoons paprika
1 1/2 teaspoons seasoned salt
3 pounds catfish fillets
1 tablespoon vegetable oil

  1. In a shallow bowl combine water, lemon juice and Worcestershire sauce; set aside.
  2. In a shallow dish, mix together flour, paprika and seasoned salt; set aside.
  3. Rinse fish, pat dry with paper towel. Dip fish in water mixture; dredge in flour mixture to coat.
  4. Heat oil in a large skillet over medium-high heat. Place fish, skin-side up in skillet and cook for 6 to 7 minutes. Turn and cook until firm, about 7 more minutes. Serve hot.

Makes 8 servings.
