Salmon Fiesta Tacos

1 (14 3/4-ounce) can salmon, or 2 (7 1/2-ounce) cans
1 1/2 cups thick and chunky salsa
1 (4-ounce) can diced green chiles, drained
1 (8 3/4-ounce) can black beans, rinsed and drained
1 dozen corn taco tortillas (warmed or fried)
Suggested Condiments:
Cabbage or lettuce, shredded
Green onion, chopped
Tomatoes, chopped
Monterey Jack or cheddar cheese, shredded
Black olives, sliced
Avocado, seeded, peeled and diced
Fresh cilantro leaves, chopped
Sour cream
Lime wedges
  1. Drain and flake salmon, removing skin and bones if necessary. Set aside.
  2. Combine salsa, green chiles and beans in a large saucepan; stir and heat through. Add the salmon; stir gently and heat through again. Transfer salmon mixture to a serving dish.
  3. To serve, allow each person to build their own taco by spooning salmon mixture into prepared tortilla shell and topping with desired condiments.

Makes 4 to 6 servings.
