Salmon Fiesta Tacos
- 1 (14 3/4-ounce) can salmon, or 2 (7 1/2-ounce) cans
1 1/2 cups thick and chunky salsa
1 (4-ounce) can diced green chiles, drained
1 (8 3/4-ounce) can black beans, rinsed and drained
1 dozen corn taco tortillas (warmed or fried)- Suggested Condiments:
- Cabbage or lettuce, shredded
- Green onion, chopped
- Tomatoes, chopped
- Monterey Jack or cheddar cheese, shredded
- Black olives, sliced
- Avocado, seeded, peeled and diced
- Fresh cilantro leaves, chopped
- Sour cream
- Lime wedges
- Drain and flake salmon, removing skin and bones if necessary. Set aside.
- Combine salsa, green chiles and beans in a large saucepan; stir and heat through. Add the salmon; stir gently and heat through again. Transfer salmon mixture to a serving dish.
- To serve, allow each person to build their own taco by spooning salmon mixture into prepared tortilla shell and topping with desired condiments.
Makes 4 to 6 servings.
