Santa Fe Roast Trout

Recipe Ingredients:
4 (8 to 12-ounce) Clear Springs Dressed Whole trout
1/2 cup chopped fresh tomato
1/4 cup chunky salsa
1/4 cup sliced pimiento stuffed green olives
2 tablespoons chopped fresh cilantro or parsley
2 teaspoons chili powder
1 clove garlic, minced
Cooking Directions:
- Preheat oven to 350°F (175°C).
- Remove heads and/or tails from trout if desired.
- Combine remaining ingredients; spoon mixture into trout cavities.
- Place trout on a foil-lined or greased shallow baking sheet.
- Bake 20 minutes or until trout is cooked through, 145°F (62.7°C) internal temperature.
Makes 4 servings.
