Shrimp Casserole

1 cup chopped peeled onion
1/2 cup chopped green bell pepper
1/2 cup butter
1 pound shrimp, peeled and deveined
1 1/2 cups uncooked rice
1 (14.5-ounce) can Rotel diced tomatoes with peppers
1 (10.75-ounce) can condensed cream of shrimp, undiluted
1 teaspoon Cajun seasoning
1 teaspoon salt
1/2 teaspoon ground black pepper
  1. In a small sauce pan, saute onion and bell pepper in butter. Mix all ingredients together in an ungreased 13 x 9-inch baking pan.
  2. Bake for 1 to 1 1/2 hours in a 350°F oven. Stir every 20 minutes until done

Makes 5 servings.
