A classic restaurant dish
that's easy to make. Serve over rice pilaf or noodles.
Shrimp Scampi
- 1/4 cup butter
1 pound large shrimp, peeled and deveined
1 clove large garlic, crushed
2 tablespoons Dijon mustard
1/4 cup lemon juice
1/4 cup chopped fresh flat-leaf parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
- In a skillet, over medium-high
heat, melt butter. When foam subsides add shrimp and crushed
garlic clove. Sauté until shrimp are just pink. Stir in
mustard, lemon juice, parsley, salt and pepper; cook until thoroughly
heated. Serve immediately.
Makes 4 servings.
