Simmered with garlic and tomatoes these plump shrimp form the basis for a fabulous but simple meal when served with fluffy rice, crusty bread and a crisp salad.

Shrimp with Tomatoes and Garlic

1 tablespoon olive oil
1/2 onion, chopped
4 cloves garlic, peeled and minced
1 green bell pepper, seeded and diced into 1/4-inch pieces
1 (14 1/2-ounce) can chopped tomatoes, drained
1 teaspoon crushed dried thyme
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 pound shrimp, shelled and deveined
1 lemon, juiced
  1. Heat oil in large skillet over medium-high heat. Add onion and sauté until soft, about 5 minutes.
  2. Add garlic and bell pepper; sauté another 5 minutes.
  3. Add tomatoes and reduce heat to low; add thyme, salt, and pepper. Simmer 10 minutes.
  4. Add shrimp, mix well, and simmer covered until shrimp are pink and curled, about 5 to 7 minutes. Sprinkle with lemon.
  5. If desired, serve with steamed rice.

Makes 4 servings.
