Orange roughy fillets are topped with a nutmeg-seasoned chopped spinach and bread crumb mixture, sprinkled with freshly grated Parmesan cheese and baked.

Spinach Orange Roughy

1 (10-ounce) package frozen chopped spinach
2 tablespoons dry bread crumbs
1/4 teaspoon ground nutmeg
1/8 teaspoon ground black pepper
8 ounces orange roughy fillets
2 tablespoons freshly grated Parmesan cheese
1 lemon, cut into wedges for accompaniment

  1. Preheat oven to 350°F (175°C).
  2. Cook spinach according to package directions. Combine with bread crumbs, nutmeg and pepper.
  3. Place fish, skin-side down, in a well greased, 8-inch-square baking pan. Spread spinach mixture over fillets then sprinkle with Parmesan.
  4. Bake 20 to 25 minutes or until fish flakes easily.
  5. Serve with lemon wedges.

Makes 2 servings.
