These tasty tuna cakes are quick, easy and quite satisfying. Try them in toasted burger buns with your favorite toppings.

Tuna Patties

2 (6.5-ounce) cans tuna, drained
2 tablespoons chopped onion
2 large eggs, separated
2 tablespoons all-purpose flour
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
Vegetable oil for frying
  1. Separate tuna with a fork; set aside.
  2. Beat egg whites with an electric mixer until fluffy. Add egg yolks and beat until just blended. Stir flour, salt and pepper into egg mixture. Add tuna and mix well.
  3. Heat oil in large frying pan to medium-high. Add tuna mixture by large spoonfuls, pressing mixture down to form patties. Cook patties until golden brown on both sides.
  4. Drain on paper towels and serve.

Serves 2 to 4.
