A scrumptious shrimp dish that can be served
as a side dish or as a main entree.
Zesty
Shrimp and Vegetable Pasta
- 8 ounces dried penne pasta,
cooked, drained and kept warm
2 tablespoons olive oil
2 cups broccoli florets
1 small onion, chopped
1 large green bell pepper, seeded and chopped
1 pound medium raw shrimp, peeled and deveined
1 (9.75-ounces) jar shrimp sauce
1/4 cup whipping cream
2 tablespoons capers
- Heat oil in large skillet
over medium-high heat. Add broccoli, onion, bell pepper; cook,
stirring frequently, for 3 to 4 minutes or until crisp-tender.
Add shrimp; cook, stirring frequently, for 2 to 3 minutes or
until shrimp turns pink. Reduce heat to low.
- Stir in shrimp sauce,
cream and capers; cook, stirring occasionally, for 2 minutes
or until heated through. Add pasta to skillet; toss to coat.
Makes 4 servings.
