Apricot Honey Glazed Carrots.

The blending of apricot nectar and honey enhances the natural sweetness of baby carrots. This side dish will be loved by young and old alike. Serve with any of your favorite entrées for a simple yet sophisticated accent.

Apricot Honey Glazed Carrots

1 cup Apricot KERNS® from LIBBY'S Refrigerated All Nectar
1 tablespoon honey
1 tablespoon butter or margarine
1/4 teaspoon salt
1 1/2 teaspoons cornstarch
1 pound baby carrots
  1. Combine nectar and cornstarch in small bowl; mix until smooth.
  2. Cook carrots in boiling water for 10 minutes or until crisp-tender; drain.
  3. Return to pan and add honey, butter and salt. Add nectar mixture and cook over low heat for 5 minutes or until apricot glaze is thickened.

Makes 4 servings.
