Toasted pine nuts, barley and brown rice are combined in a warm and comforting pilaf that has an irresistible nutty flavor. Serve alongside pork or poultry for a perfect addition to your favorite meal.

Arizona Brown Rice Pilaf

4 cups chicken broth
4 tablespoons butter or margarine
1 clove garlic, finely chopped
3/4 cup brown rice
3/4 cup barley
1 (4-ounce) can ORTEGA® Diced Green Chiles
1/3 cup pine nuts, toasted
1 tablespoon chopped fresh cilantro
  1. Combine chicken broth, butter and garlic in medium saucepan; bring to a boil. Add rice and barley; reduce heat to low. Cook for 40 to 45 minutes or until tender.
  2. Add chiles, pine nuts and cilantro. Let stand, covered, for 5 minutes.
  3. Season with salt and black ground pepper to taste, if desired.

Makes 6 servings.
