Bacon and
Tomato with Rice
- 5 slices bacon, diced
2/3 cup chopped green pepper
1/2 cup chopped onion
1 clove garlic, minced
3 large tomatoes, peeled and cut into eighths
3 cups cooked rice
1/4 teaspoon ground black pepper
- Cook bacon until almost
crisp in large skillet over low heat. Pour off fat; return 2
tablespoons drippings to skillet. Add green pepper, onion and
garlic; cook until tender crisp.
- Stir in tomatoes, rice
and black pepper; heat thoroughly.
Makes 6 to 8 servings.
