A simple side dish of cooked
rice embellished with cooked diced bacon, chopped fresh chives
and Worcestershire sauce. A tasty use for leftover rice!
Bacon
Chive Rice
- 3 slices bacon, diced
3 cups hot cooked rice*
1/4 cup chopped chives
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon Worcestershire sauce (optional)
- Cook bacon until crisp
in large skillet. Drain fat.
- Add rice, chives, salt,
pepper and Worcestershire sauce. Mix well and heat thoroughly.
Makes 6 servings.
*According to the USA Rice
Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid
for 18 to 20 minutes will yield approximately 3 to 4 cups cooked
rice.
