Once you've tasted roasted asparagus...you may never go back to steamed! Embellished with freshly grated Parmesan cheese and bread crumbs, this side dish is sure to please.

Baked Asparagus with Parmesan

1 pound asparagus
1 tablespoon olive oil - divided use
2 1/2 tablespoons freshly grated Parmesan cheese
1 1/2 tablespoons soft white bread crumbs
  1. Preheat oven to 450°F (230°C).
  2. Toss asparagus spears in 1 to 2 teaspoon olive oil and arrange in baking pan .
  3. Sprinkle with Parmesan cheese and bread crumbs. Drizzle with remaining olive oil.
  4. Bake uncovered until asparagus is just tender, about 15 minutes.

Makes 4 servings.
