A unique skillet sauté
of onion, cooked rice, barbecue sauce, liquid smoke and seasonings.
Barbecue
Rice Platter
- 1 tablespoon vegetable
oil
1/3 cup chopped onion
3 cups cooked rice*
1/2 cup barbecue sauce
1/4 cup sliced green onion
1 teaspoon chopped cilantro
1/2 teaspoon garlic powder
1/4 teaspoon liquid smoke
- Heat oil in large skillet
over medium-high heat. Add onion; cook 2 to 3 minutes or until
translucent. Add rice, barbecue sauce, green onion tops, cilantro,
garlic powder and liquid smoke. Cook until thoroughly heated.
- Serve with barbecued chicken
breast, sliced pork or beef.
Makes 6 servings.
*According to the USA Rice
Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid
for 18 to 20 minutes will yield approximately 3 to 4 cups cooked
rice.
