A simple and tasty side
dish of black beans, cooked rice, chopped tomato, green onions
and shredded cheddar cheese tossed with an Italian dressing and
lime juice, and served at room temperature or chilled.

Bean and Rice Medley
- 3 cups cooked rice*
1 (16-ounce) can black beans, drained and rinsed
1 large tomato, seeded and chopped
1/2 cup (2 ounces) shredded cheddar cheese
4 green onions, chopped
1/3 cup prepared Italian dressing
1 tablespoon lime juice (optional)
- Combine rice, beans, tomato,
cheese and onions in large bowl. Pour dressing and lime juice
over rice mixture and toss. Serve at room temperature or chilled.
Makes 6 servings.
*According to the USA Rice
Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid
for 18 to 20 minutes will yield approximately 3 to 4 cups cooked
rice.
