Black Bean and Rice Medley
A simple side dish of black beans, rice, tomato, green onions and cheddar cheese tossed with lime juice and Italian dressing. Serve at room temperature or chilled.
3 cups cooked rice*
1 (16-ounce) can black beans, drained and rinsed
1 large tomato, seeded and chopped
1/2 cup (2 ounces) shredded cheddar cheese
4 green onions, chopped
1/3 cup prepared Italian dressing
1 tablespoon lime juice (optional)
- Combine rice, beans, tomato, cheese and onions in large bowl. Pour dressing and lime juice over rice mixture and toss. Serve at room temperature or chilled.
Makes 6 servings.
*According to the USA Rice Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid for 18 to 20 minutes will yield approximately 3 to 4 cups cooked rice.
