This casserole will blow away all those skeptics who think beans are boring and meatless is mundane. Serve with your favorite rice dish for complete and satisfying meal.
Cheesy Pinto Bean Bake
- 2 (15-ounce) cans pinto beans, rinsed and drained
1 (16-ounce) package frozen corn, thawed
1 (16-ounce) jar ORTEGA Salsa - Homestyle Recipe (Mild)
1 (8-ounce) can tomato sauce
1 (4-ounce) can ORTEGA® Diced Green Chiles
2 teaspoons hot pepper sauce
1 (8-ounce) package corn chips, crushed
2 cups shredded cheddar cheese
- Preheat oven to 350°F. Grease 13x9x2-inch baking dish.
- Combine pinto beans, corn, salsa, tomato sauce, green chiles and hot sauce in medium bowl.
- Sprinkle crushed corn chips into prepared baking dish. Pour bean mixture over corn chips. Sprinkle with cheese.
- Bake for 20 to 25 minutes or until cheese is melted.
Makes 12 servings.
