A delicious baked side dish of pearl onions
and sliced carrots enrobed in a creamed mixture of sour cream
and cottage cheese seasoned with fresh herbs.
Cottage Creamed Pearl
Onions and Carrots
1 cup cream-style large curd cottage cheese
1 cup sour cream
2 1/2 tablespoons all-purpose flour
1 pound carrots, peeled, cut into 3/4-inch pieces
1 (16-ounce) package frozen pearl onions
1 tablespoon each chopped fresh savory, thyme and sage leaves
or 3/4 teaspoon dried
Freshly ground black pepper
Combine cheese, sour cream and flour in
blender container. Cover and process on high until smooth.
In large bowl, combine cottage cheese
mixture with remaining ingredients. Toss well. Pour into buttered
1 quart baking dish.
Bake at 375°F (190°C) for 1 hour.
Remove cover. Bake 30 minutes longer or
until carrots are tender.
