Cooked rice seasoned with the Creole flavor trinity of celery, onions and bell peppers pairs well with smoked turkey sausage.
3 tablespoons olive oil
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1/2 cup finely chopped red bell peppers
1 tablespoon minced garlic
1/2 cup chicken broth
4 cups cooked long grain white rice
1/4 to 1/2 cup chopped fresh flat-leaf parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
- Heat olive oil in large skillet on medium-high heat. Add celery, onion, peppers and garlic. Cook and stir 3 to 5 minutes or until vegetables are tender-crisp.
- Stir in chicken broth; bring to boiling. Reduce heat; simmer 10 minutes or until the liquid is reduced by half.
- Stir in rice, parsley, salt and pepper.
