Escallopoed Celery Cheese Casserole.

Looking for something truly different to serve as a side dish? Here's a dish that's sure to please the celery lovers in your family.

Escalloped Celery Cheese Casserole

1 (10-ounce) package frozen Welsh rarebit, defrosted according to package directions
3 cups celery, cut into 1-inch pieces
1/2 cup hot water
1 tablespoon cooking sherry, optional
1/8 teaspoon hot pepper sauce
1/4 cup bread crumbs
1/4 cup shredded cheddar cheese
  1. Preheat oven to 400°F (205°C). Grease 11/2-quart baking dish.
  2. Cook celery and water in small saucepan for 10 minutes or until tender; drain.
  3. Combine celery, welsh rarebit, sherry and hot pepper sauce in medium bowl; transfer to prepared baking dish. Top with bread crumbs and cheese.
  4. Bake for 15 minutes or until golden brown.

Makes 4 servings.
