Green Chile Rice Pilaf
This tasty rice pilaf recipe makes a large quantity, so it is perfect for a large gathering or potluck supper.
1 pound mushrooms, thinly sliced
1/2 cup chopped onion
1/4 cup butter or margarine
3 1/2 cups uncooked white rice
7 cups chicken broth
1 (4-ounce) can diced green chiles
- Melt butter in a large saucepan over medium heat and cook mushrooms and onion until tender.
- Add rice; cook for 5 minutes, stirring occasionally.
- Add the broth and chiles; bring to a boil. Cover, reduce heat, and simmer, without lifting lid, for 18 to 20 minutes or until moisture is absorbed and rice is tender. Remove from heat and fluff with fork. Serve.
