This streamlined version of the classic
Anna potatoes eliminates the tedious stirring.
Hash Browns Anna
1 stick (1/2 cup) butter or margarine
1 (26-ounce) package frozen country style hash browns
1/4 cup chopped fresh basil
3/4 teaspoon salt
1 teaspoon pepper
- Melt butter in a 10-inch cast-iron skillet
in a 450°F (230°C) oven.
- Pour into a large bowl; add hash browns,
and toss with chopped basil, salt, and pepper.
- Spoon hash brown mixture into skillet,
pressing with back of spoon.
- Bake at 400°F (205°C) for 35 minutes.
Makes 4 to 6 servings.
