Herb Garlic Beans and Vegetables

Herb Garlic Beans and VegetablesA blend of garlic and thyme accents the beans and tomatoes in this tasty side dish.

Recipe Ingredients:

2 tablespoons olive oil
1 small onion, chopped
1 small celery stalk, chopped
1 small carrot, chopped
1 clove garlic, chopped
1 (16-ounce) can BUSH'S® Red Kidney Beans, drained and rinsed
1 (16-ounce) can BUSH'S® Black Beans, drained and rinsed
1 (16-ounce) can BUSH'S® Pinto Beans, drained and rinsed
1/2 cup chopped canned whole tomatoes
1 teaspoon fresh thyme
2 teaspoons white wine
Salt and pepper to taste

Cooking Directions:

  1. Heat oil in medium sauté pan. Add onions, celery and carrots. Cook over medium heat until tender, adding garlic during last two minutes.
  2. Add beans, tomatoes, thyme, and wine. Salt and pepper to taste.

Makes 4 servings.
