A quick and easy side dish of couscous
seasoned with minced fresh herbs, extra virgin olive oil, lemon
juice, salt and freshly ground black pepper.
Herbed Couscous
- 1 1/2 cups water
1 cup couscous
1/2 cup minced fresh herbs
2 tablespoons extra virgin olive oil
Lemon juice, fresh to taste
Salt to taste
Freshly ground black pepper to taste
- Place couscous in a medium bowl.
- Bring the water to a boil in a tea kettle.
Pour over the couscous. Let the mixture stand, covered, for 5
minutes. Fluff it with a fork, and stir in the fresh herbs, oil,
lemon juice, and salt and pepper. Serve hot.
