A spicy side dish for a
Caribbean feast.
Island-Style
Rice and Beans
- 1 (16-ounce) can kidney
beans, drained
3 cups water
1 (16-ounce) can coconut milk
2 cups long-grain rice
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon crushed dried thyme
1/2 teaspoon hot pepper sauce
- In large saucepan, combine
all ingredients and bring to boil; reduce heat and simmer for
20 to 25 minutes, until all liquid is absorbed. Stir well and
serve hot.
Serves 6 to 8.
