A lightened up version of the favorite comfort food.

Lite 'n Creamy Macaroni Casserole

1/2 cup pasteurized process cheese spread
2/3 cup evaporated skim milk
3 cups cooked elbow macaroni
1 large egg, slightly beaten
2 large egg whites
1/4 teaspoon paprika
1/8 teaspon dry mustard powder
1/8 teaspoon pepper
1/2 cup (2 ounces) shredded reduced fat sharp cheddar cheese
  1. Heat oven to 400°F (250°C). Spray 1-quart casserole with on-stick cooking oil spray.
  2. In 1-quart saucepan, combine cheese spread and milk. Cook over low heat, stirring occasionally to prevent sticking, until cheese melts.
  3. In casserole, combine macaroni, egg, egg whites and seasonings; mix well. Stir cheese mixture and shredded cheese into macaroni, mixing until blended.
  4. Bake at 400°F (205°C) 20 to 25 minutes, until heated through and lightly browned.
