Mashed potatoes with French onion dip, asiago cheese and bacon add interest to this menu basic

Loaded Mashed Potatoes

4 pounds peeled cubed russet potatoes
1 cup milk
1 1/2 cups (12 ounces) ready-to-eat French onion dip
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/2 cup (2 ounces) shredded asiago cheese
2 slices cooked bacon, crumbled
  1. Preheat oven to 350°F (175°C).
  2. Place potatoes in a large saucepan and cover with water. Bring to a boil on high heat. Reduce heat to low. Cover and simmer 15 minutes or until tender. Drain; return to saucepan. Using potato masher, mash potatoes with milk. Blend in dip, salt and pepper.
  3. Place potato mixture in shallow 2-quart baking dish. Sprinkle with cheese and bacon.
  4. Bake 20 minutes or until heated thoroughly.

Makes 10 servings.
