An old-fashioned southern dish that is similar to a crustless sweet potato pie. This tasty version features shredded coconut and raisins...and is sure to please.

Mama's Sweet Potato Poon

1 1/2 cups dark brown sugar, firmly packed
1/2 cup butter, melted
1 large egg
8 cups coarsely shredded sweet potatoes
1/2 cup black molasses
1/2 cup self-rising flour
1/4 cup milk
1/2 cup sweetened shredded coconut
1/2 cup dark or golden raisins
1 tablespoon vanilla extract
2 teaspoons ground allspice
1 teaspoon ground cinnamon
  1. Preheat the oven to 350°F (175°C). Grease a 2-quart casserole dish.
  2. In a large bowl, cream together the brown sugar and butter. Beat in the egg. Add the remaining ingredients and mix until combined.
  3. Pour the mixture into the prepared dish and bake for 1 1/2 hours or until browned.

Makes 8 to 10 servings.
