The natural sweetness of sweet potatoes is taken to new heights in this simple yet sophisticated casserole. Brown sugar, rich coffee and dark rum blend together for an unforgettable taste experience that goes great with game or poultry.
Mocha Sweet Potatoes Casserole
- 1/2 cup strong-brewed coffee
4 large sweet potatoes, peeled, cooked and mashed
4 tablespoons butter
1/2 cup firmly packed brown sugar
1/4 cup dark rum (or juice such as apple or orange)
1/2 teaspoon ground cinnamon
1/2 cup toasted chopped pecans, divided use
- Preheat oven to 350°F.
- Combine coffee, potatoes, butter, sugar, rum, cinnamon and half the pecans in a medium bowl and mix well. Salt and pepper to taste; transfer to a greased 1 1/2-quart baking dish and sprinkle with remaining 1/4 cup pecans.
- Bake for 20 to 25 minutes, or until hot.
Makes 6 servings.
