Serve with turkey or chicken alongside
slow simmered turnip or collard greens, black eyed peas and corn
bread, for a southern-styled feast!
Orange
Candied Sweet Potatoes
- 4 large (2 pounds total)
sweet potatoes
1/2 cup water
1 cup granulated sugar
1/3 cup orange marmalade
1/2 cup frozen orange juice concentrate, thawed
- Scrub sweet potatoes,
place in a large saucepan and cover with water. Bring to a boil
and then simmer until potatoes are not quite tender when pierced
with a knife in the center, about 20 to 25 minutes. Drain potatoes
and cool until easy enough to handle.
- Using hands and/or paring
knife, remove skin from potatoes. Then cut potatoes in half lengthwise
and widthwise to make quarters.
- Arrange potatoes in single
layer in large saucepan or skillet. Combine the 1/2 cup water,
sugar, marmalade and orange juice concentrate. Pour mixture over
potatoes. Bring to a boil, reduce heat and simmer uncovered over
a very low heat for 2 hours. Using a large spoon, carefully turn
potatoes occasionally to cook evenly and coat with glaze.
