Fresh mint adds a kiss
of spring to tender, sweet green peas.
Peas
with Fresh Mint
- 1 (10-ounce) package frozen
peas
- 1/4 cup cold water
- 1 teaspoon granulated
sugar
- 2 tablespoons butter
- 1/4 cup packed fresh mint
leaves, chopped
- 1/2 teaspoon freshly ground
black pepper
- Salt to taste
- In a small saucepan cook
peas with water and sugar, covered, over medium heat until tender,
4 to 5 minutes.
- Drain cooking water off peas and add butter,
mint, pepper, and salt. Mix well and serve.
Serves 4.
