Peas with Fresh Mint
Fresh mint adds the kiss of spring to tender, sweet green peas.
1 (10-ounce) package frozen peas
1/4 cup cold water
1 teaspoon granulated sugar
2 tablespoons butter
1/4 cup packed fresh mint leaves, chopped
1/2 teaspoon freshly ground black pepper
Salt to taste
- In a small saucepan cook peas with water and sugar, covered, over medium heat until tender, 4 to 5 minutes.
- Drain cooking water off peas and add butter, mint, pepper, and salt. Mix well and serve.
Makes 4 servings.
