Pine Nuts and Corn Stir-Fry.

Pine nuts and corn combine for an amazing side dish. This dish is also perfect for entertaining as it can be prepared in advance, refrigerated and reheated.

Pine Nuts and Corn Stir-Fry

1 tablespoon canola oil
3 green onions, chopped
1 (16-ounce) package frozen corn, defrosted
1 cup (4 ounces) pine nuts, toasted
1/2 medium green bell pepper, chopped
1 tablespoon MAGGI Instant Chicken Flavor Bouillon
2 teaspoons granulated sugar
  1. Heat oil in medium skillet over medium-high heat. Add green onions; cook for 1 minute.
  2. Add corn, nuts and bell pepper; stir-fry for 2 minutes.
  3. Add bouillon and sugar; cook for 1 minute.
  4. Serve immediately.

Makes 4 servings.
