Bacon makes any dish better. Serve beans topped with green onions for added flavor.

Pinto Beans with Bacon

1 (16-ounce) can pinto beans, drained and rinsed
1/3 cup chicken broth
2 slices bacon, diced
1 tablespoon adobo sauce (from canned chipotle chiles) - optional
2 green onions, sliced
  1. In small saucepan, heat chicken broth with diced bacon gently to render some of the bacon fat, about 5 minutes.
  2. Stir in pinto beans and adobo sauce, if using, and heat through gently.
  3. Garnish with green onions to serve.
