A hearty side dish of Idaho Potatoes combined with sliced onions, makes serving Potatoes Lyonnaise at any gathering a guarantee for applause.
Potatoes Lyonnaise
- 3 large Idaho Potatoes, peeled and cubed
- 2 small onions, sliced
- 2 tablespoons margarine
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon paprika
- Combine all ingredients in a deep 3-quart microwave-safe casserole dish. Cover with microwaveable plastic wrap and microwave at HIGH 9 to 11 minutes, or until potatoes and onions are tender, stirring every 5 minutes. Let stand 5 minutes before serving.
