Rice Pilaf with Basil
and Pine Nuts
- 2 cups water
- 2 teaspoons Vegetable Redi-Base
- 2 tablespoons olive oil
- 1/2 large onion, chopped
- 1 cup long grain rice
- 1/3 cup chopped fresh basil or 1 1/2 teaspoons
dried basil
- 1/4 cup toasted pine nuts
- Saute onion in olive oil until softened.
Add rice and saute until lightly browned. Add basil and pine
nuts. Add water and Vegetable Redi-Base. Bring to a boil, stirring
to blend well. Cover tightly and simmer over medium heat for
15 minutes or until stock is absorbed.
- Gently fluff with a fork and serve.
