Rice Pilaf with Basil and Pine Nuts
A delicious and flavorful rice side dish seasoned with fresh basil and toasted pine nuts.
2 cups water
2 teaspoons Vegetable Redi-Base
2 tablespoons olive oil
1/2 large onion, chopped
1 cup long grain rice
1/3 cup chopped fresh basil or 1 1/2 teaspoons dried basil
1/4 cup toasted pine nuts
- Sauté onion in olive oil until softened. Add rice and sauté until lightly browned. Add basil and pine nuts. Add water and Vegetable Redi-Base. Bring to a boil, stirring to blend well. Cover tightly and simmer over medium heat for 15 minutes or until stock is absorbed.
- Gently fluff with a fork and serve.
